
Here is one of the best cookie recipes I've ever made. It's super easy to make, and makes an especially nice snack to have with coffee or tea. I found the recipe from an absolutely amazing cookbook I got from the library, called The Spice Bible, by Jane Lawson.
Honey and Cardamom Cookies
heaping 3/4 cup unsalted butter
2/3 cup superfine sugar (also known as baker's sugar)
1/4 cup honey
2 cups all-purpose flour
1 teaspoon baking powder
3/4 cup ground almonds
2 teaspoons ground cardamom
confectioners' sugar, for dusting
Preheat the oven to 325F. In a small saucepan, melt the butter, sugar, and honey over medium heat, stirring until the sugar dissolves.
In a large bowl, sift the flour and baking powder. Stir in the ground almonds and cardamom. Make a well in the center and add the butter mixture. Stir until just combined.
Place tablespoons of the mixture onto baking sheets lined with baking paper. Flatten slightly with the base of a glass and bake for 15-18 minutes, or until lightly golden. Rest for 5 minutes before transferring to a wire rack to cool completely. Dust lightly with confectioners' sugar.
Notes:
1. Because I was once not aware that they are the same thing, I wanted to let you know that confectioners' sugar is the same thing as powdered sugar.
2. For the ground almonds, you can either grind the almonds yourself if you have a food processor, or you can buy almond meal, which I found at Trader Joe's.
3. If you're using nonstick baking sheets, you don't need to put the cookies on baking paper. I've found that it makes no difference.
